Tutunjian - Entre Valles Ultra Premium

This intensely aromatic wine has a deep, ruby-red color. Tutunjian Entre Valles has aromas of cherry and blackcurrant, with touches of black pepper, spices and notes of toasted vanilla. In the mouth it is dry, with medium-high acidity, mature tannins, and a well-integrated touch of wood. It has a robust body, with an elegant finish.

Vineyards
Our vineyards are carefully tended with affection and respect for the natural surroundings. This new concept of “Entre Valles” or “Among Valleys” consists in selecting the best grape variety from each of our different vineyards.
The Cabernet Sauvignon comes from the Maipo Valley, in the area of Puente Alto. This sector is famous for the production of the best Cabernet Sauvignon in Chile, and stands out for its rocky soil, temperate climate and large thermal oscillation, which give this variety smooth tannins, good acidity, and a long finish in the mouth.
The Carmenere comes from Apalta, in the heart of Colchagua. The valley is famous for the quality of this variety. The vineyard is more than 60 years old, and has largely granite soil, with a percentage of clay. The Malbec and Syrah are from the Maule Valley, and come from our vineyard located in the area of Curepto, famous for both varieties.

Climate
Maipo Valley, Puente Alto: The climate here is sub-humid Mediterranean. The four seasons are well-defined, with a cold and rainy winter (May-August), and a hot, dry summer (December-February). Temperatures fall abruptly in April, allowing the Cabernet Sauvignon to mature slowly, delivering a grape with fresh aromas. Colchagua Valley, Apalta: The area has a Mediterranean-style climate, with cold, rainy winters and hot, dry summers. The valley is known for the marked difference in temperature between day and night, the ideal conditions for the growth of this grape.
Maule Valley, Curepto: This great valley is found parallel to the Andes Mountains and the Coastal Mountains, and has a large thermal oscillation between day and night. Rain is concentrated principally in the winter, with an annual average of 700mm. The summer, however, is dry and warm, with high temperatures reaching 30°C (86°F). The anticyclone of the Pacific Ocean allows nighttime temperatures to drop dramatically. These conditions allow the grapes to achieve maturation slowly, resulting in good acidity and floral notes.

Vinification
Our grapes are harvested by hand between the end of April and the beginning of May, when the grapes have reached their optimal maturity. The selective process of harvesting by hand means that only the best bunches are included, and then transported in bins of 12 kilograms, ensuring that the grapes arrive intact to the winery.
After another thorough selection process, the grapes undergo a cold maceration for 3 to 4 days, allowing the extraction of color and aromas. Then, the alcoholic fermentation takes place with selected yeasts, at temperatures of 28° to 30°C (82° to 86°F).
Malolactic fermentation is carried out in French oak barrels with one to two years of prior use, which permits a better integration of the wood and tannins. The wine then remains in these barrels for 12 months as part of the maturation process, and then passes to stainless steel tanks, where the wine is blended and matures for 5 more months. Finally, the wine is bottled, and continues ageing for 10 months, before being released on the market.
