Pacífico Sur Reserva - Cabernet Sauvignon

Our Pacifico Sur Reserva Cabernet Sauvignon is ruby red in color, brilliant and vivid. This wine stands out for its elegance and is characterized by notes of cherry, ripe black fruits, and vanilla. The wine is concentrated and distinguished by its juicy tannins and notes of plum, dried fruit, with a touch of tobacco. It has a long, persistent finish.

Vineyards
Our entire vineyard is carefully tended with affection and respect for the natural surroundings. The grapes in our Pacifico Sur Reserva Cabernet Sauvignon Reserva wine come from our own 60 hectare vineyard in Tricao in the Curico Valley. This area has extraordinary natural conditions that are perfect for the growth of wine grapes. Yields are approximately 9,000-10.000 kilograms per hectare.

Climate
Curico Valley has a Mediterranean-style climate with cold, rainy winters and hot, dry summers. Marked temperature differences between day and night make ideal conditions for the growth and slow ripening of our grapes.

Vinification
Our grapes are harvested in April when they have reached optimal maturity. In order to extract color and aromas, the must is interfused with its skin for three days at low temperatures. The must is then fermented in stainless steel tanks for seven days with selected yeasts at temperatures between 28° and 30°C (82° to 86°F). In order to extract its fruity characteristics, the wine is left to macerate a second time for ten days. Afterwards, 50% of the wine is aged in French oak barrels for six to eight months. Finally, the wine is cellared in bottles for three to six months before it is launched on the market.
