Our Pacifico Sur Reserva Carmenere is red-violet in color, brilliant and vivid. The wine is characterized by blackberries, tobacco and spices. It is an elegant and foral wine with the classic characteristics of the Carmenere grape. This is a full bodied and concentrated wine with soft tannins and a long, lingering finish.

Vineyards
Our entire vineyard is carefully tended with affection and respect for its natural surroundings. The grapes for our Pacifico Sur Reserva Carmenere are grown in our vineyards in the Valle Central of Chile and mainly from our estate in the Apalta area of the Colchagua Valley. This area is worldwide known for the excellent quality of its wines. The yields are approximately 9000 – 10.000 kg per hectare.

Climate
The Valle Central of Chile has a Mediterranean-style climate with cold, rainy winters and hot, dry summers. Marked temperature differences between day and night make ideal conditions for the growth and ripening of the grapes.

Vinification
Our grapes are harvested by hand in April when they have reached optimal maturity. In order to extract color and aromas, the must is submitted to a pre-fermentative maceration process during five to six days at low temperatures. The must is then fermented in stainless steel tanks for seven days with selected yeasts at temperatures between 28° and 30°C (82° to 86° F). In order to extract its fruity characteristics, the wine is then left to macerate a second time for ten days. Afterwards, 50% of the wine is aged in French oak barrels for three to six months. Finally, the wine is cellared in bottles for three to six months before it is launched on the market.
