Our “Granate” has a beautiful and intense pink color with elegant bubbles. The aromas are intensely fruity with pronounced notes of pomegranate as well as scents of red fruits such as strawberries and raspberries. In the mouth it is balanced, with a sweet and fresh finish. It is juicy and vibrant, with medium-bodied characteristics and a pleasant bubbling sensation which stress the fresh fruit notes.

Origin
The Chardonnay grapes, as well as the pomegranates, come from our Huaquen Estates which is located in the Maule Valley along the Coastal Mountain Range at the geographic coordinates of 35° 7’ 2” South Latitude and 71° 43’ 29” West Longitude, at 150 meters above sea level. The vineyards and pomegranate orchards are planted on gentle slopes on volcanic soils with low organic material. This pumice type soil is between 50 cm and 1.5 meters deep.

The Chardonnay harvest is carried out from the end of March until early April and the pomegranates are picked from the middle of April until mid May. These fruits are hand-picked and transported in 10-12 kg cases in refrigerated trucks in order to avoid the risk of oxydation and to preserve their organoleptic characteristis.

Climate
The Huaquen Estate is located along the Coastal Mountain Range in the town with the same name at 40 km from the Pacific Ocean and 2 km from the Mataquito river. This geographic area has a microclimate with winds coming from the Pacific Ocean which produce a decrease in temperature during the summer months. Due to this, during the ripening period the lowest temperature goes down to 15°C and the highest reaches 30°C, with marked temperature differences between daytime and nighttime, a condition which is optimum for the Chardonnay grape as well as for this fruit as it allows it to preserve its aromas, natural acidity and maximise the production of elements which are responsible for the color of the pomegranates.

The Huaquen area has a Mediterranean style climate which is perfect for the production of pomegranates. The rain is concentrated mostly during the winter months. The average annual rainfall is approximately 774mm.

Vinification
Our grapes are hand-picked and submitted to direct pressing (champenoise pressing) with whole clusters and no maceration. Following this, the juice is separated from its lees for a clean fermentation. Afterwards, the must is fermented in stainless steel tanks during 20-30 days, with selected yeasts at a temperature between 12° and 13° C. The ageing over fine lees is carried out in stainless steel tanks during 2-3 months in order to strengthen the structure and aromas of the wine. The pomegranates are harvested and the arils are processed manually. The arils are then pressed in pneumatic presses in order to extract the juice which is 100% natural. Finally, the Chardonnay wine is blended with the pomegranate juice, filtered and prepared for the process of bottling and gasification.
